Fresh, Local, and a Sit-down Family Meal
Much like last summer, we get local produce delivered to our front door. We belong to a weekly service called The Produce Box. We order our box on Sunday night, fresh produce is picked Monday and Tuesday, and delivered Wednesday afternoon. It makes for wonderful, more healthy meals – and especially the absolute best sweet corn ever.
I loved the colors in this week’s box. Peaches, tomatoes, a long, goofy green pepper, two types of melons (sprite and oriental) I’ve never tried before, sweet corn, butternut squash, and a purple bell pepper.
I immediately made a salad with the tomatoes and purple bell pepper, spaghetti with the green pepper and flavored with oregano and basil from our back porch, amazing sweet corn, and finished the meal off with a homemade blueberry applesauce, made with blueberries from last week’s box.
If only I could cook like this every night!
